Homemade Granola


3 cups of old fashioned rolled oats
2 cups of mixed fruit and nuts
1 cup of desiccated coconut
½ teaspoon of cinnamon
½ cup of coconut oil
½ cup of maple syrup
½ teaspoon vanilla paste or extract
Add ons ½ cup choc chips, cranberries, extra fruit or nuts.


Place all your dry ingredients into a large mixing bowl. Melt the coconut oil in the microwave and then stir into your dry mixture. Add you vanilla extract and maple syrup. Mix well. Line a baking tray with grease proof baking paper. Place your mixture onto the baking sheet and bake in the oven at 180 degrees for approximately 15-20 minutes until golden brown. Leave to cool and then store in an airtight container. Serve with yogurt and fresh fruit. Enjoy!
